Amy Racine EUA
Amy Racine is Beverage Director of JF Restaurants, Michelin-starred Chef John Fraser’s New York City-based hospitality group that operates creative F&B concepts across America. She is an Advanced Sommelier and graduated from the Culinary Institute of America in 2011, before embarking on a hospitality career that has taken her to restaurants, hotels and resorts from coast to coast. As Beverage Director, Amy is responsible for leading cocktail creation, curating unique wine lists, and working with the teams at each restaurant to preserve an excellent beverage program for guests in New York, California, Florida, and Massachusetts. Since joining JF Restaurants, Amy’s has earned POPULAR at The Public Hotel, IRIS, The Terrace & Outdoor Gardens, 701West, Ardor, and North Fork Table & Inn Wine Spectator's “Award of Excellence.” Additional restaurant accolades include Wine Spectator’s (2020) “Best Of” award and Esquire’s (2020) “Best Bars in America” at 701West, as well as Ardor’s nomination for “Best Cocktails'' at Tales of the Cocktail (2022). Amy alone was named Esquire's “Beverage Director of the Year” (2021) and has most recently been nominated for “Sommelier/Beverage Director of the Year '' by Wine Enthusiast (2022).

I've been in the wine trade for over 40 years, nearly twenty years as a specialty wine store owner, then another twenty years in corporate roles in both the US and Australia. I've been a Master of Wine since 2002. I currently have a consulting business, with projects in Italy, Spain, Portugal, Argentina, Chile, Australia and the US. In late 2022, I launched a YouTube channel, Bob Paulinski Master of Wine. I've judged in wine competitions on five continents.

Ewa Starzycka Polónia
From 2020 is a member of the Polish Sommelier Association and one year later she became an office manager of this association. In 2021 she was a co-organizer of the first edition of ASI Bootcamp held in Warsaw for 45 sommeliers from Europe and Africa, this started her passion to organise wine events. Since that time, she took part in organising a lot of very important wine events in Poland, as an event manager. She also shares her knowledge and experience about wine by running a social media content about wine on Instagram (@winokatpl), Facebook (Winokat) and blog (www.winokat.pl), as well as she wrote some articles for polish wine and horeca business related magazines. She co-founded the company Winokat in 2020 in order to do wine tastings and training for wine lovers and professionals. She works with the wedding sector in Poland by doing specialist panels about wine for wedding planners. In 2023 she started a new project with a wine stand for all kinds of events. Privately she is interested in travelling, which is a consequence of completing geographical studies and participating in two Erasmus+ programmes in Spain. In 2022 she became a Spanish Wine Educator, after a week of training during the first worldwide edition of this course in Spain. John Lancaster has been the wine director at the James Beard award-winning Boulevard Restaurant for the last two decades. Previously, he directed the wine program in San Francisco at the wildly eclectic Cypress Club. After travelling extensively through the world’s wine regions, John launched his own wine brand, Skylark Wine Company, in 2002.

Pre-digested fiber technician who today works as a sommelier at Reastaurang Äng. In 2018, I wanted to learn more about wine and understand the basics, which led to me taking some courses at Munskänkarna in Helsingborg. In 2019, I decided to apply to RHS Grythyttan to start studying to become a sommelier. It has made me today have a degree in meal creator and sommelier from Örebro University. In 2021 I started competing in sommelier and am today part of the Swedish sommelier national team. This has resulted in me placing 5th in the Nordic Championships 2022 and 2nd in the Swedish Championships 2022.
Michael Tremblay Canadá
Michael is the Beverage Director at Toronto’s ki modern Japanese and a WSET Diploma graduate. He is the co-author of the book Exploring the World of Japanese Craft Sake: Rice, Water, Earth (Tuttle 2022). Michael is a certified WSET wine and sake instructor, a senior sake judge for the International Wine Challenge and the U.S. National Sake Appraisal in Hawaii. In October 2018 Michael was inducted as a Sake Samurai at the Matsuo Taisha Shrine in Kyoto, a 1300-year old shrine to sake. This is a distinction held by only 70 people at that time.

She is also a specialist in food and wine pairing, water tasting and Wine Educator for D.O. Ribera del Duero, D.O. Rueda and California Wines.

Mike Turner is a UK-based freelance writer, presenter, judge and educator, and regular contributor for The Buyer trade magazine. He also runs a wine events business, Feel Good Grapes, that explores and discusses the idea of sustainability in the wine trade.

Thomas Vaterlaus Suíça
Nascido em Ermatingen em 1960, Thomas Vaterlaus tem formação profissional em jornalismo, tendo a partir de 1990 trabalhado como freelancer para grandes jornais diários, tais como a Weltwoche, Annabelle e SonntagsZeitung. A partir de 1995, trabalhou em várias funções para a revista Vinum, uma das principais publicações especializadas em vinho, gastronomia e enoturismo no mercado, sendo hoje seu editor-chefe e um dos mais reputados críticos de vinho do país. Visita regularmente Portugal, tendo um conhecimento detalhado das diferentes Regioes Demarcadas do nosso país. Participa ainda com regularidade no painel de jurados internacionais do TOP 10 Vinhos Portugueses – Revista de Vinhos, além de orientar desde 2010 provas de vinho comentadas e ações de formacoes sobre vinhos portugueses no mercado suíço, com destaque para a Wines of Portugal.

Wojciech Starzycki Polónia
Started his wine profession in 2017 as a sommelier in fine dining restaurant Kieliszki na Proznej in Warsaw. From 2018 is a member of the Polish Sommelier Association and two years later he became a Regional Representative of the Warsaw region. In 2021 he got the title of Professional Sommelier in the Polish Sommelier Association. Later on he was working as sales representative for Off-trade and On-trade, as well as, manager in two wine shops in Warsaw. From 2020 he started sharing his knowledge about wine with others by writing a blog and social media as Winokat - a company, of which he is a co-founder. Then this passion for discovering wines became a daily work. Now he is responsible for consulting wines as a partner of a few wine importers for the on-trade channel. He also works as an event coordinator and sommelier at different wine events in Poland. Recently he does regular wine tastings and seminars for beginners, wine lovers, as well as for companies and professionals. He also does training for waiters in wine bars and restaurants in Poland to show them how to serve, sell wine and talk about them. Privately he is interested in sailing, music and travelling. He is writing a master thesis about wine certification in South Africa at the Faculty of Geography at the University of Warsaw. Yumi Tanabe Japão
Ms. Yumi Tanabe was born in Ikeda town, Hokkaido where is Tokachi Wine producing regions. Her father was pioneer to founding a winery there. She had studied Mathematics at Tsuda University in Tokyo and stayed in New York for taking the education of Wine & Spirits at Cornell University. In 1986, established “Wine & Wine Culture Co., Ltd.” and organized “Yumi Tanabe’s Wine School” to develop the wine professional from 1992. In 2009, French government awarded “L'order du merite Agricole” to her to express the appreciation for her achievements of establishing the wine culture in Japan. In 2013, established “SAKURA” Japan Women’s Wine Awards, which is international wine competition judged by only Japanese female wine specialists. In 2015, Appointed Honorary President of Hokkaido Wine Academy, sponsored by Hokkaido Provincial Government to train grape and wine producers. In 2020, her company has been the representative of Wines Of Portugal in Japanese Market.
